Ingredients

For the Shrimp:

  • 1 lb large raw shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper (optional)
  • Salt and black pepper, to taste

For the Salad:

  • 5 oz mixed greens (arugula, spinach, or spring mix)
  • 1 avocado, sliced
  • 1 cup strawberries, sliced
  • ½ English cucumber, shaved into ribbons
  • 2 tablespoons pine nuts
  • Fresh dill or microgreens (optional, for garnish)

For the Dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • ½ teaspoon Dijon mustard
  • Salt and pepper, to taste

Method

  1. Prep the Shrimp:
    In a bowl, toss shrimp with olive oil, smoked paprika, garlic powder, onion powder, cayenne (if using), salt, and pepper until evenly coated.

  2. Preheat the Air Fryer:
    Set your Beautiful™ 6QT Digital Air Fryer to 400°F and let it preheat for 3 minutes.

  3. Air Fry the Shrimp:
    Place the shrimp in the air fryer basket in a single layer. Air fry for 8 minutes, flipping halfway through, until shrimp are opaque and slightly crispy on the edges.

  4. Toast Pine Nuts (Optional):
    While the shrimp cook, lightly toast pine nuts in a dry skillet over medium heat for 2–3 minutes until golden and fragrant.

  5. Make the Dressing:
    Whisk together olive oil, lemon juice, honey, Dijon, salt, and pepper in a small bowl or jar.

  6. Assemble the Salad:
    In a large serving bowl, layer the greens, avocado slices, strawberries, cucumber ribbons, and toasted pine nuts. Top with the warm air-fried shrimp.

  7. Drizzle & Serve:
    Pour the dressing over the salad just before serving. Garnish with fresh dill or microgreens for extra flair.
