Air-Fried Shrimp & Strawberry Avocado Salad

Ingredients
For the Shrimp:
- 1 lb large raw shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon cayenne pepper (optional)
- Salt and black pepper, to taste
For the Salad:
- 5 oz mixed greens (arugula, spinach, or spring mix)
- 1 avocado, sliced
- 1 cup strawberries, sliced
- ½ English cucumber, shaved into ribbons
- 2 tablespoons pine nuts
- Fresh dill or microgreens (optional, for garnish)
For the Dressing:
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon honey
- ½ teaspoon Dijon mustard
- Salt and pepper, to taste
Method
Prep the Shrimp:
In a bowl, toss shrimp with olive oil, smoked paprika, garlic powder, onion powder, cayenne (if using), salt, and pepper until evenly coated.Preheat the Air Fryer:
Set your Beautiful™ 6QT Digital Air Fryer to 400°F and let it preheat for 3 minutes.Air Fry the Shrimp:
Place the shrimp in the air fryer basket in a single layer. Air fry for 8 minutes, flipping halfway through, until shrimp are opaque and slightly crispy on the edges.Toast Pine Nuts (Optional):
While the shrimp cook, lightly toast pine nuts in a dry skillet over medium heat for 2–3 minutes until golden and fragrant.Make the Dressing:
Whisk together olive oil, lemon juice, honey, Dijon, salt, and pepper in a small bowl or jar.Assemble the Salad:
In a large serving bowl, layer the greens, avocado slices, strawberries, cucumber ribbons, and toasted pine nuts. Top with the warm air-fried shrimp.Drizzle & Serve:
Pour the dressing over the salad just before serving. Garnish with fresh dill or microgreens for extra flair.
