Raspberry Mint Ice Cream

Ingredients
- 2 cups heavy cream
- 1 cup whole milk
- ¾ cup granulated sugar
- 1 ½ cups fresh raspberries (plus extra for garnish)
- ½ teaspoon pure vanilla extract
- ¼ cup fresh mint leaves, finely chopped (plus extra for garnish)
- Pinch of salt
Method
Freeze the Bowl:
Place the freezer bowl of your Beautiful™ Ice Cream Maker in the coldest part of your freezer for at least 24 hours. Shake it—if you hear liquid sloshing, it’s not frozen enough.Prepare the Base:
In a mixing bowl, whisk together the heavy cream, milk, and sugar until fully combined. Stir in the vanilla extract, salt, chopped mint, and gently mash 1 cup of the raspberries into the mixture.Chill the Mixture:
Cover and refrigerate the base for at least 2 hours to ensure it’s thoroughly chilled before churning.Assemble the Machine:
Place the frozen bowl into the base of the machine. Insert the mixing paddle into the bowl, then cover with the transparent lid and align it into the locked position. Plug in the unit.Churn the Ice Cream:
With the unit assembled and powered on, pour the chilled mixture into the bowl through the opening in the lid. Let it churn for 20–30 minutes until it reaches a soft-serve consistency.Add Final Raspberries:
During the last 5 minutes of churning, add the remaining ½ cup of whole raspberries through the lid’s ingredient spout to mix them in gently.Freeze to Firm:
Transfer the soft ice cream into a freezer-safe container and freeze for an additional 2–4 hours, or until it reaches your desired scoopable texture.Serve and Garnish:
Scoop into bowls or cones and top with extra raspberries and fresh mint for a beautiful presentation.
